The Château Latour à Pomerol winery encompasses one of the most significant Grand Cru sites at the Gironde estuary and deliberately utilizes the physical properties of the heavy clay-loam soil. This special subsoil optimally stores precipitation and gives the vines a clear structural presence, establishing the estate as a benchmark address in the northern high-lying area. The outstanding 2005 vintage was defined by a dry growing season and mild autumn months, promoting full polyphenolic ripeness. Manual selection ensured only intact berry cells before the must stood for two weeks in temperature-controlled tanks and then aged for fifteen months in freshly supplied oak barrels.

Visually, the wine presents a dense ruby color, with a clear violet hue at the rim. The bouquet is complex, with accents of forest berry juice, dried licorice, violets, and a hint of mineral smoke. On the palate, it convinces with a velvety richness paired with precise acidity architecture. The tannins are already integrated, the fruit notes are clearly contoured and accompanied by a firm backbone. The finish lingers in the mouth for a long time. The current drinking window begins now and is expected to last conservatively until 2040.

The composition pairs ideally with robust roasted ingredients. Boiled veal or a traditionally prepared duck naturally complement the tannin structure. Even aged hard cheeses like Comté surprisingly harmonize well with the organic acid base. A serving temperature of Celsius ensures full aroma development.

Last but not least, we also examine the wine's composition. Color, turbidity, sediment, and the bubbles in a champagne reveal a lot about the wine's or champagne's condition and potential drinking pleasure.
