Château Les Carmes Haut-Brion 2015 represents one of the consistent biodynamic creations in Pessac-Léognan, Southwest France, utilizing the region's characteristic gravel and clay soils. The complete absence of synthetic inputs for over two decades ensures a striking earthiness and precise acidity. The warm summer of the 2015 vintage promoted full grape ripening and robust tannin structures, guaranteeing the wine's excellent ageability.

The aroma profile displays intense nuances of dark forest berries, violet-like floral notes, cedarwood, and a hint of damp earth. On the palate, the wine is silky, has a medium body, and is supported by finely grained tannins, allowing for a long-lasting finish. The optimal drinking window is between 2025 and 2040.

For dinner, flavorful meat dishes with strong seasoning, such as venison or long-braised veal, are recommended. Aged Gruyère or dishes with porcini mushrooms also harmonize ideally with the mineral note. The existing fruit acidity cleanses the palate and supports complex cooking techniques equally well.

LIFE BEFORE...

Where possible, and especially with larger wine cellar purchases, the wine cellars of the previous owners tell us a lot about the storage conditions of the wines. A professionally managed wine cellar usually guarantees perfect storage conditions for the wines. We acquire our wines exclusively from reputable, mostly private wine collectors.

HIDDEN FEATURES

Many high-quality wines today feature various security features for authentication, such as markings that only become visible under UV light. We check and compare all purchased wines for these features using an extensive database, and if there is even the slightest doubt, we reject the wine.

THE DETAILS MATTER

We examine wine labels under a microscope to determine their quality, and we check the printed image for any peculiarities that are typical for a particular winery, wine, or vintage. We draw on a large image database to identify any anomalies.

COLOR MAKES THE DIFFERENCE

Last but not least, we also examine the wine's composition. Color, turbidity, sediment, and the bubbles in a champagne reveal a lot about the wine's or champagne's condition and potential drinking pleasure.
