The Robert Weil winery applies minimal interventionist techniques to this Premier Cru, ensuring that the stony soil notes are authentically transferred to the must weight. The 2015 vintage offered consistent sun exposure for full phenolic ripeness, yet maintained a clearly structured acid backbone through cool night phases on the slopes, guaranteeing a robust aging framework for its development.
In the glass, the Grosses Gewächs presents a brilliant yellow-green with a complex nose of ripe sweet potatoes, honeydew melon, white stone fruit, and wet gravel. On the palate, the pronounced dryness is confirmed by a precise, almost crisp acid architecture that holds the dense fruit texture together and allows for an extremely long, subtly mineral finish. The optimal drinking maturity extends from 2024 to 2036, during which secondary aging aromas will develop and the youthful vigor will transform into a smooth overall harmony.
For culinary symbiosis, this Gewächs provides an ideal matrix for spicy freshwater fish cuisine; braised flounder in herb jus or carp in an asparagus crust ideally utilize the acid-activating component. Likewise, lightly roasted lamb with chestnut stuffing or semi-hard mountain cheese harmonizes optimally, as the clear acidity resolves flavor excesses and permanently enlivens the main components of the dish.
