Sine Qua Non Mr. K The Noble Man 2005 [Half] impresses with the unmistakable signature of the Californian winery, known for its bold blends and artistic labels. The half-bottle (375 ml) is perfect for a focused tasting in a small setting. The 2005 vintage lends the wine a structured maturity with ripe fruit and fine tannins. Its distinctive character lies in the winery's artistic and artisanal cellar design and expressive blending philosophy, which critics such as Falstaff, Robert Parker, Jancis Robinson, Jeff Leve, and Wine Spectator regularly praise.

On the nose, the Noble Man unfolds a rich bouquet of dark plums, sloes, and blackberries, refined by coffee, chocolate, graphite, and subtle leathery notes. On the palate, it reveals a concentrated, silky structure with fine-grained tannins and elegant oak spice. The fruit remains aromatically present, while spice notes, smoke, and mineral undertones add depth. The long finish combines freshness, complexity, and a subtle salty-mineral note.

Food pairing: This wine pairs well with grilled beef fillet, game dishes, or aged cheese, and also harmonizes beautifully with dark chocolate. Serve at approximately 16-18°C and allow it to breathe for two hours before enjoying. This limited-edition half-bottle is aimed at collectors and connoisseurs who appreciate an intense, complex tasting experience in a compact format.

LIFE BEFORE...

Where possible, and especially with larger wine cellar purchases, the wine cellars of the previous owners tell us a lot about the storage conditions of the wines. A professionally managed wine cellar usually guarantees perfect storage conditions for the wines. We acquire our wines exclusively from reputable, mostly private wine collectors.

HIDDEN FEATURES

Many high-quality wines today feature various security features for authentication, such as markings that only become visible under UV light. We check and compare all purchased wines for these features using an extensive database, and if there is even the slightest doubt, we reject the wine.

THE DETAILS MATTER

We examine wine labels under a microscope to determine their quality, and we check the printed image for any peculiarities that are typical for a particular winery, wine, or vintage. We draw on a large image database to identify any anomalies.

COLOR MAKES THE DIFFERENCE

Last but not least, we also examine the wine's composition. Color, turbidity, sediment, and the bubbles in a champagne reveal a lot about the wine's or champagne's condition and potential drinking pleasure.
