Keller's Hipping HM 2017 captivates with a distinctive blend of terroir-driven minerality and a subtle freshness. This wine, sourced from the renowned Hipping vineyard, a treasure trove of fine limestone and stony soils, reflects Keller's philosophy of crafting wines that combine clarity, precision, and longevity. The 2017 vintage delivers substance without sacrificing elegance, making this cuvée a prime example of terroir interpretation. Critics such as Falstaff, Parker, Jancis Robinson, Jeff Leve, and Wine Spectator regularly praise Keller for its pronounced aging potential, further enhancing this wine's appeal.

On the palate, the nose reveals ripe green apples, limes, and a delicate minerality, accompanied by floral nuances. The vibrant, well-integrated acidity is captivating, combined with concentrated fruit and a long, elegant minerality on the finish. Optimal drinking window is expected between 2020 and 2035; an approachable choice today, with development potential in the coming years. The balance of freshness and substance lends the wine an inner calm and a smooth drinkability that makes it appealing even now, while its structure continues to gain complexity.

Food pairing recommendation: This wine is an excellent accompaniment to seafood such as scallops in light butter, grilled fish, asparagus dishes, creamy risotto variations and Asian dishes with chili and ginger – anything that harmoniously underlines the fresh minerality and freshness of the wine.

LIFE BEFORE...

Where possible, and especially with larger wine cellar purchases, the wine cellars of the previous owners tell us a lot about the storage conditions of the wines. A professionally managed wine cellar usually guarantees perfect storage conditions for the wines. We acquire our wines exclusively from reputable, mostly private wine collectors.

HIDDEN FEATURES

Many high-quality wines today feature various security features for authentication, such as markings that only become visible under UV light. We check and compare all purchased wines for these features using an extensive database, and if there is even the slightest doubt, we reject the wine.

THE DETAILS MATTER

We examine wine labels under a microscope to determine their quality, and we check the printed image for any peculiarities that are typical for a particular winery, wine, or vintage. We draw on a large image database to identify any anomalies.

COLOR MAKES THE DIFFERENCE

Last but not least, we also examine the wine's composition. Color, turbidity, sediment, and the bubbles in a champagne reveal a lot about the wine's or champagne's condition and potential drinking pleasure.
